Product Development: 2020 A Year In Review

Hey Gelato Lover, 

Since day one our fans have been our guiding light. We design our pints with you in mind, listening to your feedback and dreaming up ways to bring new creations to your local freezer aisle. So what did we get up to this year? 

We created our Plant Based Gelato line up, inspired by our Dairy Free Dark Chocolate recipe. A fan favourite since it’s launch in 2017, we would hear fans asking “how can this flavour be so creamy without containing dairy?”.  It made us realize the need for more great Plant Based options - especially as traditional gelato flavours. This 4 flavour line extension was developed with a focus on dairy alternatives and bringing our most requested flavours of all time to life, and Righteous’ first ever nut based flavours. The line has Italian favourites, like Roasted Pistachio and Salted Hazelnut, and more conventional nostalgic flavours, including Chocolate Peanut Butter and Peanut Butter and Jam. We were able to achieve a creamy plant based gelato by using the best quality nut butters in conjunction with a type of citrus fibre that helps with emulsification and enhances the texture. The citrus fibre is made from a byproduct of orange juice that would normally become waste. It then goes through a process that opens up the fiber to create a high surface area which provides a high water holding capacity, cool right?! As always, our Nut Collection is all natural, non-gmo, contains no artificial flavours or colours. Just as decadent and delicious as our regular gelato, our plant based flavours hit the spot for those who are dairy intolerant & dairy lovers alike. 

We improved our formulation to handle more fluctuations throughout the cold chain as it broke our hearts when we would get photos from fans where the gelato was icy or separated. We wanted to ensure stability as the product left our hands and went through it’s journey of ending up in your freezer. We did this by increasing the amount of nonfat milk solids (skim milk powder) to enhance the creaminess, flavour profile and stability of our gelato. Fast forward to the end of 2020, complaints about icy pints went down by 92%. So awesome!

We became Non-GMO Project Certified on all of our dairy free flavours! It was a BHAG that’s been on our list for a few years now (can you spot the new butterfly on our package?!).  We’re committed to providing you with the assurance that our products have been third party verified, and are proud to now be a part of the non-GMO community.

We launched our new e-commerce site with flat-rate, nationwide shipping. This now allows fans coast-to-coast to get their  favourite flavours that might not be available in their regions, delivered straight to their doorstep. After months of testing, we created packaging, including a custom dry ice insert that keeps your pints nice and frozen during transit. Having an outlet for our fans to purchase limited edition flavours straight from our HQ allows us to continue to be creative as we look forward to bigger and better things in 2021! 

Since we couldn’t be together this summer, we instead launched a tasting panel of 150 Righteous fans. Our tasting panel helps provide our team with real, raw feedback on new innovations, tweaks on current recipes and more. Sounds like a pretty sweet deal, doesn’t it?
